Hundreds of rashers of bacon were sampled at Harper Adams University College last week as part of the judging of a national competition.
Butchers, farm shops, manufacturers, retailers and catering suppliers were all invited by BPEX to enter the ‘Red, White and Bacon awards’, the results of which will be announced during the annual Bacon Connoisseurs’ Week, March 19-25.
Pork experts from The Grocer, Meat Trades Journal and Ladies in Pigs spent two days at Harper Adams in Shropshire, analysing both raw and cooked samples.
Keith Fisher, Butchery and Product Development Manager at BPEX and competition ‘Bacon-ologist’, said: “This is the first time that we have been away from our usual judging venue in Milton Keynes.
“It is nice to find an environment, such as Harper Adams, where we can continue the stability of judging.
“We have all been extremely pleased with the facilities here at the Regional Food Academy on campus, and I’m certain that we’ll be back!”
Entries were accepted across four categories – Classic Dry Cure, Traditional Wet Cure, Smoked Cure and the ‘Rasher-nal’ Treasure Award.
